After the emergence of the novel Coronavirus, the restaurant industry had to change and adapt to meet new demands in accordance with public health guidelines. Between March and October 2020, the U.S. restaurant industry lost $130 million in revenue (when compared to 2019) in addition to the loss of 2.1 million jobs and the closure of over 110,000 restaurants. In the wake of such unprecedented change and loss, how are restaurants adapting? With COVID-19 vaccinations underway, what do restaurant owners, managers, and workers expect to change in a post-pandemic world?
